Del Professore Pickled Vermouth, born in collaboration with Marian Beke of The Gibson bar in London, is a unique product, out of the box and therefore surprising.
Aromatic and fruity wines blend with unusual spices and aromatic herbs, giving life to an original demi-sec Vermouth which combines the centuries-old Piedmontese craftsmanship with the millenary culture of the "pickles" and above all with the creativity and inspiration of one of the most fanciful bartenders on the world scene. The Gibson Pickled Vermouth is fresh and fruity on the nose, with light notes of dill and laurel leaf, then explodes on the palate with hints of coriander, absinthe, Jamaican pepper, cubeb, clary sage and red thyme which give a unique, full flavor, with a refreshing citrus finish, enriched with a persistent grapefruit note.

It is a living, constantly evolving product. It boasts a lovely amber hue and a complex bouquet of flowers, ripe fruit and spices such as vanilla, cloves and mace. Its subtle mouthfeel on the palate is in perfect balance with the sweetness, the refreshing citrus and cinnamon notes, and the delicate cinchona and gentian finish.

The intense garnet-coloured vermouth discloses notes from the Barbera, a generous Piedmontese red rape variety used for the base wine, and a secret mixture of spices. It possesses fresh, spicy notes of orange and coriander along with elegant vanilla overtones. The gently bitter addition of the cinchona closes the circle, creating balance and immediate drinking pleasure.

Vermouth Torino Rosso
Aged in wooden barrels for several months this Vermouth is crafted from a Nebbiolo base wine. Balsamic and mentholated notes, accompany aromas of wormwood, bitter orange and spices. Soft and full on the palate, with a perfect balance between the alcohol and the sugar, interlaced with pleasantly bitter and smooth rhubarb notes.

The Fighting Bear
The Fighting Bear the latest addition into the Del Professore family. It is aLondon Dry Gin produced solely and exclusively with juniper from the Umbrian-Tuscan Apennines, harvested when fully ripe between September and October, to which in addition, fragrant Roman chamomile, bitter orange peel , angelica root and other spices, let it mature slowly and naturally, without haste. The entire distillation process takes place in a current of steam, to ensure maximum extraction and qualitative yield from botanicals.
Each batch is single shot to ensure constant monitoring of the quality of the distillate and a meticulous screening of the quality of the botanicals before their use.
The result is an elegant, round, fragrant and soft distillate.
